All of the grapes that go into making our vintage wines come from the 16 acre Findon Park vineyard. The three classic varieties, Chardonnay, Pinot Noir and Pinot Meunier make up the assemblage of these wines.
Dermot uses 6-7 year old oak barrels from Domaine Jacques Prieur in Puligny-Montrachet for the fermentation, which brings character and complexity but avoids the subtle flavours being over powered by the oak.
The different years dictate the range of wine that will be made and therefore they are all unique and limited. The chalk minerality of the vineyard and low levels of dosage at disgorging give these wines fantastic aging potential and wonderful structure.
