  • Bottling Our wines are bottled the summer after harvest, which is the moment they begin their second fermentation, which gives them their bubbles and evolved character. 2018

  • Dosage The dosage indicates the amount per litre of sugar in the 'liqueur de dosage', a mixture of wine and sugar added to the bottles when they are disgorged at the end of the ageing process, to ensure balance and harmony in the final blend. 8 grams per litre

OUR BENCHMARK english SPARKLING WINE – A DELICIOUS TREAT

Our Brut NV combines a purity of green apple and ripe lemon flavours with a rich and complex maturity. This multi-vintage wine is a highly-scented sparkling wine with fine bubbles, lots of toasty, biscuity autolysis from long lees-aging and a long finish.

Our NV wines are a composition of many vintages blended together. The journey of this wine started in 2008 where we reserved a small amount of wine. Each year that we harvest grapes and make wine, we build up our reserve wines. This allows us to create a style consistent year on year and show a piece of Wiston history in every glass- our very best English sparkling wine. This current iteration is made up of 70% of wine from 2017. When it is ready to be released the wine is disgorged here at the winery, and allowed to rest before release.
