Sous Chef – Chalk Restaurant

Chalk Restaurant opened in November 2021 at the award-winning Wiston Estate vineyard and winery. We are a 50-cover restaurant with private dining, events program, and a mobile food offering (Chalk Express).

We are looking for a driven and talented chef to work closely alongside the head chef in delivering the food offering throughout the week. As an integral member of the team, you will be utilising the very best estate grown produce contributing to regular recipe development and menu creation in line with the wider vision and ethos of Wiston Estate.

The ideal Sous Chef candidate:

  • Shares our passion for quality, seasonality and ‘estate to plate’ ethos
  • Has strong leadership and organisational skills
  • Has a good understanding of managing stock levels, food costing and labour within budgetary requirements
  • Can maintain quality and consistency while producing high volume
  • Thrives working in a team to deliver outstanding food quality
  • Knowledge of preservation techniques and interest in foraging with a view to minimise waste and maximise flavour

40-hour contract, 5 days per week + only 2 regular evening services

Tues – Sunday breakfast and lunch, dinner Friday and Saturday

Up to £32,000 Per Annum basic (+ Tronc) for the right candidate

Based in the heart of West Sussex, Wiston Estate is a rural estate which comprises a number of enterprises. It is one of the UK’s most awarded sparkling wine producers, comprising vineyards and winery teams. In 2021 Chalk Restaurant and Cellar Door shop opened, meaning the estate now employs a significant hospitality team. The estate also encompasses property management, farming and forestry teams. This role will sit in the hospitality team and link into the estate’s wider principles and purpose – to foster a rural meeting place where people, nature and enterprises coexist and flourish. The estate believes strongly in investing in people, maximising our resources, championing fresh thinking and extending a generous welcome to all who come to the estate.
