TASTING NOTE

A beautiful ballet shoe pale pink hue, aromas of crushed raspberries and cranberries, blackcurrant leaf, apple mint and a hint of patissiere and sweet spice. On the palate notes of sweet red apples, wild strawberries and juicy white peach. Mouthwatering acidity, elegant concentration of flavours and a long finish.

Chef Simon Rogan, who is originally from nearby Hampshire, identified Wiston for its ethical wine production methods and respect for the natural environment. He commented: “This exciting new project with Wiston feels like a natural partnership. I’ve always admired their work from afar and loved their wines. Richard and Kirsty, who are part of the Goring family and oversee the winery today, have been a joy to work alongside, and are so professional and passionate about what they do. Together we’ve created a wine we’re really proud of, dry, complex in flavour and perfect for summer – we can’t wait to see our guests enjoying it in our restaurants.”

We hosted the wine teams from Simon Rogan a little while back and found that we had a huge amount in common in our philosophies around food, wine, produce and sustainability. Not to mention the fact that we are huge admirers of what Simon himself has achieved in the restaurant world – with L’Enclume being one of the few UK restaurants with three Michelin Stars outside London. Alongside this there is Simon’s dedication to farm-to-fork eating, and education of people looking for careers as chefs or in hospitality.

A bespoke wine...

We worked together with Simon’s sommelier teams to create a special version of our Non-Vintage Rosé which is made with the restaurant’s unique menus in mind. This rosé has a low dosage of 4g/l – giving it mouth-watering acidity and precision – a perfect match for Michelin starred dishes.
