This collaboration is a true meeting of minds – with our wines linking us back to the land – where the chalky South Downs are ideal for grape growing, complementing Simon Rogan’s distinctive farm-to-fork philosophy.

Simon Rogan MBE is an internationally renowned, award-winning chef. He established his flagship restaurant, L’Enclume, in Cartmel, Cumbria, in 2002. The restaurant earned its third Michelin star in 2022, becoming the first in the UK outside London and the South East to achieve this distinction. Rogan’s culinary philosophy emphasizes sustainability and seasonality, sourcing ingredients from his own 12-acre farm, Our Farm, located near L’Enclume. His restaurant portfolio includes establishments in London, Hong Kong, Malta, and Thailand, all reflecting his commitment to local produce and innovative cuisine.

Simon Rogan and Wiston Estate Collaboration

Wiston have created a bespoke Simon Rogan Rosé NV with Simon and his team, which will be poured exclusively across the restaurants worldwide and available to order at home. Following months of development the Simon Rogan x Wiston Sparkling Rosé, has been made with a blend of Pinot Noir, Chardonnay and Pinot Meunier grapes. Deep salmon in colour and with notes of wild roses, tomato leaf, pomegranate, strawberries and cranberries, the wine is made in stainless steel tanks before being rested on its lees for eight months before bottling. A portion of Wiston reserve wines which come from Wiston harvests sating back to 2009 is added to make up the final blend before a secondary fermentation process, which takes two to four years, allowing flavour of the wines to evolve and intensify and the structure to develop.

The label design – made in collaboration with both teams, references the South Downs, the chalk hills which make Wiston’s land ideal for growing grapes for traditional method sparkling wine, and Cartmel in Cumbria – the home of L’Enclume and the Simon Rogan Home Farm.
