Thanks to John and the brilliant Wiston Gardens team, the walled garden is an essential part of Chalk. It doesn’t just supply much of the wonderful produce you see on the menu, it also gives the kitchen a connection to the garden which allows us to draw inspiration from the seasons and showcase our own locally produced ingredients. 

TOM PARRY
West Sussex

Grazing manager, Tom Parry and his Border Collie Reg work for the Sussex Wildlife Trust. His work with the trust involves management of the Trust’s livestock, including sheep and cattle. Tom provides Chalk with our Estate Herdwick Lamb. Read more about what the Sussex Wildlife Trust do.

Sean Keith, The Bee Butler

THE BEE BUTLER
Findon, West Sussex

The Bee Butler, Sean Keith is a Bee Keeper based in West Sussex whose honey we use in the restaurant. The importance of bees in our eco-system is something we cannot fail to be aware of in the current climate. The Bee Butler provides bee friendly garden design and landscaping, apiary preparation, hive management, bee experiences and of course, delicious honey – all of which is single apiary.

GREEN FARM BUTCHERY

Passionate about high quality, locally sourced produce – Green Farm Butchery is owned by Richard Cook who began his butchery career in 1965. His small dedicated team have a wealth of specialist butchery knowledge and experience – they also provide a range of Butchery Courses. Green Farm Butchery provide Chalk with an array of meats, such as beef, bacon and specialist sausages sourced from the estate.

CALCOT FARM
Steyning, West Sussex

Dave Jesse – Owner of Calcot Farm, grew up on the family farm in Ashurst. After studying alongside a local butcher, he opened Calcot Farm Produce in 2011, specialising in creative artisan cured meats, wholesome fresh cuts and a range of complementary products, unique to the farm and their high standards of animal welfare. Calcot Farm provide Chalk with Lamb and Smoked Ham.

GOODWOOD ESTATE
Chichester, West Sussex

Goodwood Home Farm Shop provides Chalk Restaurant with deliciously rich and creamy, organic Goodwood milk. Their careful approach to farming is sustainable, sensitive to the environment and above all results in delicious, high quality, award-winning produce. Their award-wining dairy products of milk, cheese and creams are all produced locally in our organic West Sussex dairy farm. Their herd of 200 milking cows are mostly Dairy Shorthorns, a breed which originated in the 16th century, the best milking cow of its time.

Knepp vegetables

KNEPP ESTATE
West Grinstead, West Sussex

Knepp Market Garden is run by Signe Jensen and Rosanna Catterall who grow a diverse range of vegetables and herbs and supply local people, restaurants and pubs with the best the season has to offer. The market garden is managed regeneratively with an aim to restore the soil by having living roots in the ground as often as possible, disturbing the soil as little as possible, planting directly into it, without digging and overturning, allowing the soil biome to thrive. also increases biodiversity – from soil biota to the insects that act as pollinators and pest control. Knepp harvest the same morning of delivery or collection so the produce received will be as fresh as possible.
