Combining creativity, sophistication, and the refreshing sparkle of HOLOS Sparkling Teas, Will’s drinks are all about layering flavour and making every sip memorable.
Cocktail of the Month: The Jasmine No-tini
Exclusively available at Chalk this September, the Jasmine No-tini is a drink that whispers sophistication. Crisp, floral, and delicately spiced, it delivers complexity and warmth. The Vejus de Périgord adds depth and a hint of sweetness, lifted beautifully by the elegance of jasmine. No garnish required — this one speaks for itself.
- 15ml PARAGON Timur Pepper Syrup
- 15ml Everleaf Non-Alcoholic Spirit Marine
- 5ml Vejus de Périgord
- Shake well and double strain into a chilled martini glass, then top with HOLOS Jasmine Hops Organic Sparkling Tea

Some of Will’s inventive creations are made for sipping at home, and they’re too delightful not to share. These recipes are perfect for experimenting, entertaining, or simply enjoying a refreshing twist on classic flavours.
Cucumber Collins with Kefir Float
A highball that’s both refreshing and fun, this cocktail combines the subtle vegetal notes of cucumber with the creamy tang of kefir. It’s a drink that surprises the palate and makes at-home bartending feel effortless.
- Plenty of ice & cucumber slices
- 50ml Tomato Water base
- Half a can of HOLOS Cucumber & Mint Sparkling Tea
- Top with a couple of spoons of Kefir yoghurt
- Garnish with straws and lime zest
Rooibos & Ginger Ice Tea (Sharer)
Simple, refreshing, and made to share. This sparkling iced tea is all about balance — sweet, zesty, and lightly spiced. Perfect for a relaxed afternoon with friends, it’s a refreshing way to enjoy the layered flavours of HOLOS Rooibos & Ginger Sparkling Tea.
- Ice with lemon and orange slices, pineapple optional
- 75ml Pineapple Juice
- Top with HOLOS Rooibos & Ginger Sparkling Tea
- A couple of dashes of Angostura Bitters
- Stir and serve in whatever glasses you have on hand
HOLOS Bramble
A fun, seasonal twist on a classic. Perfect for when you want something fruity, floral, and lightly effervescent. This Bramble brings together fresh raspberries, crisp lemon, and the delicate sparkle of HOLOS Jasmine Hops Tea. For a mocktail version, simply skip the gin — it’s just as delicious.
- Build in a rocks glass
- Muddle seasonal frozen raspberries
- 25ml fresh lemon juice
- 20ml sugar syrup
- 25ml Tanqueray Gin (optional)
- Fill with crushed ice, muddle to mix
- Top with HOLOS Jasmine Hops Sparkling Tea
- Garnish with a lemon slice and hibiscus flower
