TASTING NOTES

The 2015 Cuvée has impressive depth and complexity, with that signature precision and elegance in spades. It has aromas of baked apple tart, with notes of baked pears too and a creamy pastry base. A touched of spiced honey is balanced by brisk acidity and a touch of salinity—making the finish long and balanced.

Wiston Estate’s 2015 Cuvée has a filigree texture that retains our signature precision and elegance. A cacophony of nectarines, honey and brioche make this a real treat to sip away an evening with. It’s opulent style and focus allows for a gastronomic adventure too.

Fruit for this wine was picked in the warm October and November of 2015. The growing season that year began with a warm, frost-free period that encouraged bud burst. Temperatures cooled that spring, but by July had warmed enough for flowering, albeit a fortnight later than normal. A cool summer with unusually cold nights slowed the fruit and veraison was very late. However, a heatwave in September pushed into October and the dry weather gave us a small crop of exceptionally ripe and healthy grapes.

  • Bottling Our wines are bottled the summer after harvest, which is the moment they begin their second fermentation, which gives them their bubbles and evolved character. 2016
  • Alcohol 12%
  • Dosage The dosage indicates the amount per litre of sugar in the 'liqueur de dosage', a mixture of wine and sugar added to the bottles when they are disgorged at the end of the ageing process, to ensure balance and harmony in the final blend. 8 grams per litre
  • Food Pairing Sussex cheeses with fresh baguette, or with a smoked fish salad or tart
