Midsummer Merriment (SOLD OUT)

Join us on 29th June to celebrate Midsummer at Wiston. We will be firing up the barbecue in the Chalk courtyard, welcoming some live music and enjoying a glass of Wiston sparkling on one of the longest evenings of the year. Food will be locally sourced and knowing our team at Chalk – a delicious combination of smokey summer flavours. Our friends Elmer Shuffle (who played last year too) will be serenading us throughout the evening. We’ll also be offering guests the chance to try their hand at blind tasting to win a magnum from our cellar!

Food from the fire frame will include… BBQ-ed Porchetta Buns with Smoked Apple Sauce and Root Vegetable Slaw… BBQ-ed Halloumi with Chalk Hot Sauce and Veggie Slaw – alongside Nutbourne Tomato Panzanella or Caesar Salads.

Ticket price includes a glass of Wiston Sparkling wine (over 18s only). Food and further drink will be available to purchase on the evening. Please note this is not a sit down dinner.

What do I need to wear?

Please note this event is based outside with no seating- so please do dress appropriately. 

Where do I need to come too?

Wiston Estate Cellar Door & Chalk Restaurant- Parking will be in our Chalk Car park. 

What Happens if the weather is bad?

 If we have to cancel the event due to extreme weather conditions we will aim to give minimum 24 hours notice, and tickets will be refunded.

Are dogs allowed?

Sadly for this event, we would ask for no dogs.

Are children allowed?

 Over 18s only

Can you cater for dietary requirements?

There will be vegetarian-friendly food options but due to the nature of this event we cannot cater for vegan diners. 

Refunds?

This event is non-refundable and cannot be exchanged.

Nobel and Stace are award winning chocolaiters based in Sussex, making chocolates, truffles and tablettes using local ingredients. We are thrilled to be collaborating with them, creating bespoke Sussex Sparkling Wine Truffles! Nobel and Stace are an official Great Taste Producer, after being awarded stars by the Guild of Fine Foods for 3 years. Their latest star in 2023 was for their Vegan Mineral Water Truffles. They are also Grand Finalists in the Sussex Food & Drink Awards 2017 and Finalists in the 2019 and 2020 awards, on all occasions for Food Producer of the Year!

Each one of Nobel and Stace’s truffles are made by Mike in their chocolate studio based just outside Midhurst, West Sussex – at the heart of the South Downs National Park. Using award-winning local ingredients, Mike starts the truffle process by making a fresh cream, milk chocolate ganache into which our Wiston Estate Rosé NV sparkling wine is blended. That’s piped into truffle shells, all by hand, before being coated in dark chocolate. Chocolates are decorated using natural colours and everything is packed, wrapped and labelled by hand to ensure only the absolutely best leaves the Chocolate Kitchen. The whole process takes several days, and the home team at Wiston can certainly tell these truffles are made with love. The results are delicious!

our rosé nv

Our Rosé NV English sparkling wine bursts with aromatic notes of rhubarb, raspberry, strawberry, redcurrant as well as wild roses, lemon zest, and a touch of sherbet on the finish. It is a superbly elegant English sparkling wine with tiny, persistent bubbles and a refreshing acidity that calls you back for more. Our NV  English sparkling wines are a composition of many vintages blended together. The journey of this wine started in 2009 where we reserved a small amount of wine. Each year that we harvest grapes and make wine, we build up our reserve wines. This allows us to create a style consistent year on year and show a piece of Wiston history in every glass. This current iteration is made up of 10% of wine from 2018 and includes 15% red wine in the blend to impart a lovely pink colour.

how do we differ between these delicious gems?

The Blanc de Blancs NV – this is our ‘everyday’ Blanc de Blancs. OK maybe we don’t open a bottle Every Day – but it is a great crowd pleaser – a mouthwatering aperitif which goes beautifully with seafood – especially fish and chips. Best drunk on the beach or a sunny seaside terrace. It has aromas of green apple, grapefruit and lemon zest, alongside a palate of pear tart, a hint of hazelnut and pastry. Smooth delicate bubbles and racy freshness.

The current Estate Blanc de Blancs vintage release – 2018 – this is a refined creature, with more elegance and intensity than the NV, and a lot of ageing potential here. Old barrels are used in fermentation which give the wine a texture and roundness on the palate, making it a richer experience. Perhaps one to savour for a special moment – by itself or matched with juicy king prawns or a plate of Sussex cheeses. Intense notes of nougat and baked apple tart on the nose, with a hint of toasted almonds. The palate is rich and intense, with mouthwatering freshness and a long finish

the library collection

The Library Collection Blanc de Blancs 2010 – one for the real connoisseurs. Our Library Collection is a selection of wines which we have kept back for extended ageing in our cellars – or very small and special parcels. This is a stunning Blanc de Blancs – aged for 8 years on lees in our cellars, and a further five years age on cork – yet it tastes beautifully fresh and lively. We’ll let someone who knows her stuff describe it for us…

“97 points from Decanter Magazine (Oct 2023) – A limited-edition release from the excellent 2010 vintage, this is a wonderful example of how beautifully English blanc de blancs can age. Savoury, mushroom and spice aromas with notes of digestive biscuit and truffle. Generous and long, with bracing acidity but plenty of rich, savoury flavour. Drinking beautifully now but with the ability to mature further.” Susie Barrie MW.
