Aromas and flavours of baked pear, greengage, rich buttery croissants, vanilla bean and toasted almonds. Great complexity and richness but with an electric and fresh finish, beautifully balanced acidity and a savoury mineral core.

The 2018 harvest, which has gone down in recent folklore of UK grape growing. A year when the stars aligned. A four-week window of exceptional weather around flowering helped create a bountiful crop (approx. 70% more than average) with exceptional level of ripeness. Who’d have bet on that in late February when we welcomed the Beast from the East?! The good weather persisted, through October, when the grapes were hand harvested. The whole bunches were gently pressed in the Coquard to preserve delicate fruit flavours and aromas. The juice was fermented in old French barrels and stored for nine months before bottling. The wine was then aged for four to five years on lees, before ageing on cork.

- Dosage The dosage indicates the amount per litre of sugar in the 'liqueur de dosage', a mixture of wine and sugar added to the bottles when they are disgorged at the end of the ageing process, to ensure balance and harmony in the final blend. 7 grams per litre
