RARE GEMS FROM OUR CELLAR
Two gems from our Library Collection – For the connoisseur in your life – two wines which have been aged for many years in our cellars. Winner of multiple Trophies, including Best English Sparkling Wine at the International Wine Challenge, the Blanc de Blancs is incredible example of aged English Chardonnay. Layers of honey, truffle, lemon zest, Danish pastry and crushed oyster shells, with a sublime finish that goes on and on.
The Cuvée 2009 is from a small parcel which was held back from Wiston’s first commercial vintage – and only disgorged at the end of 2023. The result is stunning. It has a superbly fine mousse, delicate notes of tangerine, cherry Bakewell and white chocolate on the nose, while the palate is beautifully fresh with a backbone of citrus alongside richer lemon curd and marzipan notes.
Description
Blanc de Blancs 2010: The Chardonnay grapes were pressed in our traditional Coquard press, then half the juice was fermented in stainless steel tanks and half in old oak barrels. The still wine was rested on its lees for several months until springtime, bringing additional complexity and structure. Due to the ideal ripeness of the fruit malolactic fermentation was blocked leaving the wine with natural malic ‘energy’. Bottling took place in late spring of 2011, and then secondary fermentation and lees ageing followed. This Library Collection release was disgorged in November 2018 and has since rested on cork.
Cuvée 2009: Grapes were pressed in Wiston’s iconic Coquard press – allowing for extremely gentle pressing. Each variety was picked at optimal ripeness, fermentation was carried out in a range of young and old Burgundy barrels, as well as stainless steel, and without malolactic fermentation. The wine was then bottled in July 2010, and allowed to rest for thirteen years ageing on lees – being finally disgorged in December 2023 .
