We decided to distill leftover grape juice from our pressings which we could not make into wines – this is what forms the base product of our Wiston Estate gin. Along with this we took inspiration from the chalk grasslands around us, the gin being flavoured with juniper, wild thyme and the savory herb, all of which grow here on the estate. These, along with a dash of Sicilian lemon are what make up the flavour palate of the gin. The result is an elegant and smooth gin with a beautiful delicate herbal element, refreshing citrus core and fruit juniper base notes. We hope you enjoy it as much as we do!
