Wiston Christmas Wine Ideas

’tis the season to be jolly…

As the festive season approaches, it’s time to start thinking about what sparkle you’ll be pouring this Christmas. We have a fizz to pair perfectly with any course – whether that’s a bottle of Blanc de Blancs NV alongside your smoked salmon and scrambled eggs for breakfast, or sipping on a glass of Blanc de Noir whilst indulging in some delicious leftovers. Here at Wiston, we asked the team what they will be serving up at home this Christmas to give you some inspiration…

Marcus, Head winemaker at Wiston Estate, West Sussex

Marcus – Head winemaker:  “My Wiston Wine choice for Xmas – Blanc de Noirs 2014 Extra Brut on Christmas eve whilst wrapping presents. As I’ll be in Scotland for Christmas, I’ll be enjoying a Glenfarclas 15 yr old or 3 which always reminds of the best Christmas flavours.”

Ollie – Operations Manager: “A magnum of Blancs de Blancs NV. To himself. Only joking!”

Tom – Retail Manager: “For Christmas there is one Wiston wine that I must always have a bottle of, and that is the Blanc de Noirs 2014. For me this is the perfect wine to wind down after all the madness of the festive feasting. I like to open this once everyone else has gone, find a nice comfy chair and build myself a plate of seemingly random leftovers. The Blanc de Noirs just goes perfectly with everything from a cold roast potato to a slice of blue cheese, with a pig in blanket on the side. My other must have for Christmas is a bottle of quality sherry. Either a cream or oloroso for those nutty flavours that work so well with all the smells and treats of Christmas.”

Kirsty – Brand Director:2009 Cuvee magnum! And will definitely be having some of Pip’s Christmas cake with some Rose NV

Tori, Head of Marketing & Sales at Wiston Estate

Travis – Vineyard Manager: “The Blanc De Noir 2014 whilst longing for a slightly warmer Christmas back home in South Africa”

Tori – Head of Marketing & Sales:Blanc de Blancs 2018 – this to sip while I am sous cheffing for the Christmas lunch – perhaps a secret bottle hidden away for chefs only?! I think it will go beautifully with some seafood nibbles…”

Abi – Digital Marketing: “Wiston Choice – would have to be the Brut NV– Served whilst cooking and opening presents with my family. Small part of luxury amongst the chaos these two parts of Christmas delivers. Then a little bit out there but we do all love a retro Snowball cocktail!”

Lucy, events manager at Wiston Estate South Downs

Lucy – Events Manager: “I like to light the blue touch paper on guest arriving with a Gin Fizz.  It gets everyone on the same wavelength in the quickest time. I would always stick to a Wiston Blanc de Blancs NV, cutting through all the rich foods that comes at Christmas.  I would definitely treat myself to the vintage too!”

Candace – Cellar door & Tasting: “There will be lots of wine at Christmas for us but our favourites are always: Wiston Blanc de Blancs NV in Magnum with oysters on Christmas Eve, we follow this with paella. Then on Christmas morning we will be opening a bottle of Cuvée 2016 with our stockings and a brunch of smoked salmon and cream cheese bagels. Forever tradition: When wrapping pressies (multiple stocking fillers for many children) I will be sipping on my homemade sloe gin, neat over ice in front of the fire. Christmas Day evening, when all the washing up is done and hubbie is snoring on the sofa, Blanc de Noir 2014 with leftover cheese, sticky figs and nuts. Boxing Day Riesling with curry!!!
