WHY BUY A MAGNUM?

There are a number of factors which mean that the magnum has a number of advantages over the normal 75cl bottle when it comes to the ageing process – and these positively impact the resulting wine. Magnums slow down the traditional method bottle-aging process as they hold twice as much wine as a bottle, but have the same space between the bottom of the cork and the wine’s surface. The resulting reduced exposure to oxygen will slow down the wine’s aging – resulting in more complex flavours. As well as this the large liquid quantity of a magnum means that they are naturally less sensitive to temperature fluctuations – which can impact wine quality.

Description

This is a ‘magnified’ version of our Blanc de Blancs NV. The wine has been ageing on lees since 2015, and is a stunning example of  traditional method English sparkling chardonnay with extended lees ageing. The base harvest of 2014 was a great harvest which produced some fabulous vintage wines. This wine is a blend of that harvest and older reserve vintages which we held back in the winery, which give added complexity and depth to this serious treat of a wine.

This is a rich and intense wine. The nose is full of baked apricots, vanilla bean and lemon tart (from the glaze to the pastry)! The body is full – the extended lees ageing imparting a textured feel and a wonderfully fine mousse. There are notes of brioche, sweet green apple and a long, buttery finish.

  • Bottling Our wines are bottled the summer after harvest, which is the moment they begin their second fermentation, which gives them their bubbles and evolved character. 2015

  • Dosage The dosage indicates the amount per litre of sugar in the 'liqueur de dosage', a mixture of wine and sugar added to the bottles when they are disgorged at the end of the ageing process, to ensure balance and harmony in the final blend. 8 grams per litre
